🧺 Ingredients

🌟 Starter

  • 300 ml warm milk
  • 2 tbsp sugar
  • 7 g dry yeast
  • 150 g wheat flour

🥣 Dough

  • 3 eggs
  • 2 tsp salt
  • 3 tbsp sugar
  • 100 ml melted butter
  • 500 g wheat flour
  • Up to 100 g extra flour (if needed)

  • 1 egg

👩‍🍳 Step-by-Step Recipe

1️⃣ Prepare the Starter

In a large bowl:

  • Mix warm milk with sugar until dissolved
  • Add dry yeast and stir gently
  • Sift in 150 g flour and mix until smooth

Cover the bowl and let it rest in a warm place for 10–15 minutes until bubbly.


2️⃣ Mix the Wet Ingredients

In a separate bowl, whisk together:

  • Eggs
  • Salt

Add this mixture to the starter.

Pour in the melted butter and mix well.

Add sugar and stir until combined.


3️⃣ Add the Flour

Sift in the 500 g flour in two batches, mixing after each addition.

If the dough feels too runny, gradually add up to 100 g extra flour.

Mix using a Danish dough whisk or spoon until the dough becomes smooth.

✨ The dough should be soft and slightly sticky.


4️⃣ Shape the Dough

Transfer the dough onto a work surface.

Lightly grease your hands with oil, then divide the dough into 6–8 equal pieces.

Shape each piece into a smooth ball.

Place the dough balls into a 15×30 cm baking pan.


5️⃣ Let It Rise

Cover the pan and let the dough rise for about 1 hour, or until doubled in size.


6️⃣ Brush & Bake

Whisk 1 egg and gently brush the tops of the brioche.

Bake at 160–180°C (320–355°F) for about 30 minutes, or until beautifully golden brown.
