  • 300 g (1½ cups) granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 240 ml (1 cup) whole milk
  • 120 ml (½ cup) vegetable oil
  • 2 tsp vanilla extract
  • 240 ml (1 cup) hot coffee or hot water

Chocolate Buttercream Frosting

  • 250 g unsalted butter, softened
  • 500 g icing sugar
  • 60 g cocoa powder
  • 2 tsp vanilla extract
  • 3–5 tbsp heavy cream or milk
  • Pinch of salt

Chocolate Ganache

  • 200 g dark chocolate, finely chopped
  • 200 ml heavy cream

Decoration

  • Chocolate curls
  • Chocolate sprinkles (optional)

Instructions

1. Prepare the Cake Layers

Preheat the oven to 175°C (350°F). Grease and line two 8-inch round cake pans with parchment paper.

In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

Add the eggs, milk, vegetable oil, and vanilla extract. Beat until the batter is smooth and well combined.

Gradually stir in the hot coffee or hot water. The batter will be quite thin, which helps create an exceptionally moist cake.

Divide the batter evenly between the prepared cake pans.

Bake for 30–35 minutes, or until a skewer inserted into the center comes out clean.

Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

2. Make the Chocolate Buttercream

In a large bowl, beat the softened butter until light and creamy.

Gradually add the icing sugar and cocoa powder, mixing on low speed until fully incorporated.

Add the vanilla extract, salt, and 3 tablespoons of cream or milk. Continue beating until the frosting becomes smooth, fluffy, and spreadable. Add more cream if needed to achieve the desired consistency.

3. Prepare the Chocolate Ganache

Place the chopped dark chocolate in a heatproof bowl.

Heat the heavy cream until it begins to simmer gently, then pour it over the chocolate.

Allow the mixture to sit for 2 minutes before stirring until smooth, glossy, and fully combined.

Let the ganache cool slightly until it reaches a pourable consistency.

4. Assemble the Cake

Place one cake layer on a serving plate or cake board.

Spread a generous layer of chocolate buttercream evenly over the top.

Position the second cake layer on top and cover the entire cake with the remaining buttercream. Smooth the sides and top using an offset spatula or cake scraper.

Refrigerate the cake for 20 minutes to firm up the frosting.

Pour the chocolate ganache over the center of the chilled cake, gently guiding it toward the edges to create elegant drips down the sides.

5. Decorate and Serve

Finish with chocolate curls, chocolate sprinkles, or your favorite chocolate decorations.

Allow the ganache to set slightly before slicing and serving.

Pro Tips for the Perfect Chocolate Fudge Cake

  • Use hot coffee instead of water to enhance the chocolate flavor without adding a coffee taste.
  • Ensure all refrigerated ingredients are at room temperature before mixing.
  • Chill the cake before adding the ganache for cleaner, more defined drips.
  • For extra richness, use high-quality dark chocolate in the ganache.
