🎉 Vanilla Celebration Cake (2 Layers)

📝 Ingredients
For the Cake:
- All-purpose flour – 2 cups (250 g)
- Baking powder – 2½ tsp
- Salt – ½ tsp
- Unsalted butter, softened – ¾ cup (170 g)
- Granulated sugar – 1½ cups (300 g)
- Eggs – 3 large
- Milk – 1 cup (240 ml)
- Vanilla extract – 2 tsp
For the Buttercream Frosting:
- Unsalted butter, softened – 1 cup (225 g)
- Icing sugar – 4 cups (480 g)
- Milk or cream – 3–4 tbsp
- Vanilla extract – 1 tsp
- Pinch of salt

- Rainbow sprinkles
👩‍🍳 Instructions
1. Prep & Bake the Cake
- Preheat oven to 170°C (340°F). Grease and line two 8-inch round cake pans.
- In a bowl, mix flour, baking powder, and salt. Set aside.
- Cream butter and sugar until pale and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla.
- Alternately add dry ingredients and milk, starting and ending with the dry ingredients. Mix gently until smooth.
- Divide batter evenly into prepared pans and bake 30–35 mins, or until a toothpick comes out clean. Cool completely.
2. Make the Buttercream
- Beat butter until creamy. Gradually add icing sugar, then milk, vanilla, and salt.
- Beat until smooth, fluffy, and spreadable.
3. Assemble the Cake
- Place one cake layer on a serving plate. Spread buttercream evenly on top.
- Place the second layer over it. Frost the top and sides smoothly.
- Decorate with rainbow sprinkles as desired.
