🍋 Famous Yogurt Lemon Cake That Melts in Your Mouth

This incredibly soft and moist yogurt cake is a true favorite for a reason. It comes together in just minutes and bakes into a light, fluffy dessert with a refreshing lemon flavor. Each bite is tender, fragrant, and perfectly balanced—sweet, citrusy, and absolutely irresistible.

🧁 Ingredients

  • 3 eggs
  • A pinch of salt
  • 150 g sugar
  • A dash of vanilla extract
  • 120 ml melted butter
  • 180 g Greek yogurt
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 250 g flour
  • 10 g baking powder

🍰 Instructions

  1. Preheat your oven to 180°C (356°F).
  2. In a bowl, whisk the eggs with a pinch of salt until slightly frothy.
  3. Add sugar and vanilla extract, and whisk until smooth and light.
  4. Pour in the melted butter and mix well.
  5. Add the Greek yogurt, lemon zest, and lemon juice. Stir until combined.
  6. In a separate bowl, mix flour and baking powder.
  7. Gradually fold the dry ingredients into the wet mixture until you get a smooth batter.
  8. Pour into a greased baking pan.
  9. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

🍯 Lemon Syrup Topping

  • 4–5 tbsp lemon juice
  • 4–5 tbsp powdered sugar
  • Desiccated coconut

Mix the lemon juice with powdered sugar until smooth. While the cake is still warm, drizzle the syrup over the top and sprinkle generously with desiccated coconut.
