📝 Ingredients
🌾 Dry Ingredients
• 2 cups (250g) all-purpose flour
• 1½ tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 1 tsp ground cinnamon
🍯 Sweeteners
• ¾ cup (150g) granulated sugar
• ½ cup (100g) brown sugar
🥛 Wet Ingredients
• 2 large eggs
• ½ cup (120ml) vegetable oil
• ½ cup (120ml) fresh orange juice
• 2 tbsp orange zest
• 1½ cups (150g) finely grated carrots
• ½ cup (120ml) yogurt or buttermilk
• 1 tsp vanilla extract
✨ Optional Add-ins
• ½ cup chopped walnuts or pecans
• ¼ cup raisins
👩🍳 Instructions
1️⃣ Preheat oven to 180°C / 350°F and line a muffin tray with paper liners.
2️⃣ In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
3️⃣ In another bowl, mix eggs, both sugars, oil, orange juice, yogurt, orange zest, and vanilla until smooth and well combined.
4️⃣ Add the wet mixture into the dry ingredients and stir gently until just combined.
🚫 Do not overmix.
5️⃣ Fold in the grated carrots and any optional nuts or raisins.
6️⃣ Fill the muffin cups about ¾ full with batter.
7️⃣ Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
8️⃣ Let muffins cool slightly in the pan, then transfer to a wire rack to cool completely.
