π Ingredients
πͺ For the Cookies
- 200g all-purpose flour
- 50g custard powder (like Birdβs custard powder)
- 100g unsalted butter, softened
- 80g powdered sugar
- 1 tsp vanilla extract
- 2β3 tbsp milk
β¨ For the Filling
- 100g unsalted butter, softened
- 150g powdered sugar
- 1β2 tbsp custard powder
- 1 tsp vanilla extract
π©βπ³ Instructions
1οΈβ£ Make the Dough
Cream together the butter and powdered sugar until light and fluffy.
Add vanilla extract and mix well.
Sift in:
- all-purpose flour
- custard powder
Mix until a soft dough forms.
Add milk little by little if needed to bring the dough together.
2οΈβ£ Shape the Cookies
Roll out the dough to about 5mm thickness.
Cut into:
- rectangles
- circles
- or classic oval custard cream shapes β¨
Place cookies onto a lined baking tray.
3οΈβ£ Bake
Bake in a preheated oven at 170Β°C (340Β°F) for 12β15 minutes.
The cookies should remain pale with lightly golden edges.
Allow them to cool completely before filling.
4οΈβ£ Make the Filling
Beat butter until creamy and smooth.
Add:
- powdered sugar
- custard powder
- vanilla extract
Beat until fluffy and silky.
5οΈβ£ Assemble
Spread or pipe the custard filling onto one cookie.
Top with another cookie to create a sandwich.
Gently press together.
