Fluffy Japanese Pancakes

If you love soft, tall, and fluffy pancakes, you have to try these Japanese pancakes! They’re light, airy, and incredibly tender. Here’s how to make them perfectly fluffy every time.

Ingredients

  • Eggs, separated into yolks and whites
  • Milk, a splash for the yolks
  • Vanilla extract
  • Cake flour or all-purpose flour
  • Sugar, for the meringue
  • A little oil, for cooking
  • A few drops of water, for steaming

 

Instructions

1. Prepare the Egg Yolks

Crack the eggs and separate the yolks from the whites.

Add a splash of milk to the egg yolks and mix well. Milk adds moisture and helps create a lighter, fluffier batter.

Add a little vanilla extract for extra flavor.

Gradually add the flour, preferably sifted, little by little. Mix until you have a smooth and creamy consistency. Set the mixture aside.

2. Make the Meringue

Place the egg whites in a mixing bowl. For the best results, chill the egg whites in the freezer for about 10–15 minutes before whipping.

Start whipping on low speed. Once the egg whites become foamy, gradually add the sugar bit by bit.

Increase the mixer speed and continue whipping until stiff peaks form. The meringue should look shiny and hold its shape, but be careful not to overwhip it.

 

 

3. Combine the Batter

Add about one-third of the whipped egg whites to the egg yolk mixture. Gently mix until smooth.

Pour this mixture into the remaining egg whites.

Using a spatula, gently fold everything together. Do not use a whisk or mixer at this stage. Keeping the batter light and airy is essential for tall, fluffy pancakes.

4. Cook the Pancakes

Transfer the batter into a pastry bag. If you don’t have one, you can use a regular food bag with one corner cut off, or simply spoon the batter onto the pan.

Heat a skillet over very low heat and lightly oil it.

Gently pipe the batter onto the preheated skillet. The batter should hold its shape rather than spreading.

Add a few drops of water to the pan to create steam, then cover with a lid.

Cook on very low heat for 7–10 minutes. Try not to lift the lid while they cook.

 

5. Flip and Finish Cooking

Carefully flip the pancakes.

Add a few more drops of water, cover again, and cook for another about 5 minutes on low heat.

The pancakes should be soft, tender, and beautifully fluffy.

Tips for Perfectly Fluffy Japanese Pancakes

  • Chill the egg whites for 10–15 minutes before whipping.
  • Whip the meringue until it reaches stiff, glossy peaks, but don’t overwhip.
  • Fold the meringue gently to preserve the air bubbles.
  • Always cook the pancakes low and slow.
  • Avoid lifting the lid too often while cooking.
