Soft, moist, and packed with sweet dried fruits β perfect for tea time or festive baking!
π§ Ingredients
- 2 cups (250g) all-purpose flour
- 1 cup (200g) brown sugar
- 1 cup (250g) mixed dried fruits (raisins, cherries, sultanas, candied peel, etc.)
- 1 tsp baking powder
- Β½ tsp baking soda
- 1 tsp mixed spice or cinnamon powder
- Β½ cup (120ml) vegetable oil or melted butter
- 3 large eggs
- Β½ cup (120ml) milk or orange juice
- 1 tsp vanilla extract
- 1 tbsp honey or molasses (optional, for extra richness)
- A pinch of salt

1οΈβ£ Prepare the Oven
Preheat your oven to 170Β°C (340Β°F).
Grease and line a loaf pan with parchment paper.
2οΈβ£ Mix the Dry Ingredients
In a bowl, combine:
β Flour
β Baking powder
β Baking soda
β Salt
β Mixed spice/cinnamon
Set aside.
3οΈβ£ Prepare the Wet Mixture
In a large bowl, whisk together:

π§ Oil or melted butter
π― Brown sugar
Mix until smooth. Then add:

πΏ Vanilla extract
π― Honey or molasses (if using)

Gradually add the dry ingredients into the wet mixture and stir gently until just combined.
Fold in the mixed dried fruits until evenly distributed.

Pour the batter into the prepared loaf pan and smooth the top.
Bake for 55β65 minutes, or until a skewer inserted into the center comes out clean.

Allow the cake to cool completely before slicing.
