Soft, moist, and packed with sweet dried fruits โ perfect for tea time or festive baking!
๐ง Ingredients
- 2 cups (250g) all-purpose flour
- 1 cup (200g) brown sugar
- 1 cup (250g) mixed dried fruits (raisins, cherries, sultanas, candied peel, etc.)
- 1 tsp baking powder
- ยฝ tsp baking soda
- 1 tsp mixed spice or cinnamon powder
- ยฝ cup (120ml) vegetable oil or melted butter
- 3 large eggs
- ยฝ cup (120ml) milk or orange juice
- 1 tsp vanilla extract
- 1 tbsp honey or molasses (optional, for extra richness)
- A pinch of salt

1๏ธโฃ Prepare the Oven
Preheat your oven to 170ยฐC (340ยฐF).
Grease and line a loaf pan with parchment paper.
2๏ธโฃ Mix the Dry Ingredients
In a bowl, combine:
โ Flour
โ Baking powder
โ Baking soda
โ Salt
โ Mixed spice/cinnamon
Set aside.
3๏ธโฃ Prepare the Wet Mixture
In a large bowl, whisk together:

๐ง Oil or melted butter
๐ฏ Brown sugar
Mix until smooth. Then add:

๐ฟ Vanilla extract

Gradually add the dry ingredients into the wet mixture and stir gently until just combined.
Fold in the mixed dried fruits until evenly distributed.
